Rice and sausage is a tasty first course that you can prepare in a short time, amazing even the finest palates!
Ingredients for 4 people
Carnaroli rice 240 g
Sausage (to taste with or without fennel) 250 g
1/2 l vegetable broth
large onion 1
red cherry tomatoes 4
extra virgin olive oil 2 tbsp
dry white wine 200 ml (1 glass)
butter 1 nut
Parmesan cheese q.s.
nutmeg to taste
Salt and Pepper To Taste.
Start by shredding or chopping the onion,
and to prepare a vegetable broth or to use a ready-made one,
in the meantime, heat two tablespoons of extra virgin olive oil in a non-stick risotto pan,
then add the previously cut onion,
when the onion is golden, crumble the sausage without the casing,
cook for a few minutes over medium heat then blend with white wine,
once the wine has evaporated, put the rice in the pot for toasting,
turn frequently until the beans are transparent and shiny,
add three ladles of broth and continue cooking the rice,
if necessary, add more broth and season with salt.
In the meantime, cut the cherry tomatoes into pieces and prepare parmesan, butter and nutmeg for use.
When the rice is al dente, remove the pan from the heat,
add the cherry tomatoes and mix the risotto with the cheese and butter.
Finally, if you like it, add a little grated nutmeg and pepper.
Let the risotto rest for a couple of minutes in the pot and serve hot
decorating your plate with a basil leaf.
