Ingredients:
- 1 lb short pasta (fusilli, penne, etc.)
- 1 head of broccoli, cut into small florets
- 4 oz pancetta, diced
- 3 cloves of garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the pasta.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy, stirring occasionally.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add the broccoli florets to the skillet and sauté for 3-4 minutes until they are bright green and tender. If the skillet seems dry, you can add a splash of the reserved pasta cooking water to help steam the broccoli.
- Add the cooked pasta to the skillet with the pancetta and broccoli. Toss everything together until the pasta is coated in the pancetta and broccoli mixture.
- Add the grated Parmesan cheese to the skillet and toss everything together again. If the pasta seems dry, you can add a bit more of the reserved pasta cooking water to create a sauce.
