Ingredients:
- 10-12 organic lemons
- 1 liter of 95% grain alcohol
- 800g sugar
- 1.5 liters of water
Instructions:
- Start by washing the lemons with warm water and a little bit of dish soap. Rinse them thoroughly and dry them with a clean towel.
- Using a vegetable peeler, remove the yellow part of the lemon peel, being careful not to remove any of the white pith.
- Place the lemon peels into a large glass jar with a tight-fitting lid. Pour the grain alcohol or vodka over the lemon peels and seal the jar.
- Store the jar in a cool, dark place for 2-4 weeks, shaking it gently every few days.
- After 2-4 weeks, strain the lemon peels from the alcohol using a fine-mesh strainer or cheesecloth.
- In a large saucepan, combine the sugar and water and bring to a boil over medium-high heat, stirring constantly until the sugar dissolves.
- Let the sugar syrup cool to room temperature, then add it to the alcohol mixture.
- Pour the limoncello into clean glass bottles and store in the freezer until ready to serve.
- Serve chilled in small glasses after a meal, and enjoy the sweet and tangy flavor of homemade limoncello.
