The fried artichokes are an excellent appetizing and different side dish that will make your Sundays at the table joyful. Typical of the Neapolitan tradition, they will surprise you for their taste and ease of preparation.
Ingredients for 4 people
00 flour 200 g
Corn oil 1 l
Salt to taste.
Clean the artichokes by removing the hardest leaves, the tips and part of the stem.
Wash them and cut them into wedges (6 each artichoke).
Place them in water and lemon to prevent them from blackening.
In the meantime, prepare three soup plates:
In the first put the flour.
In the second, beaten eggs plus salt.
You leave the third empty.
Pass the artichokes first in the flour, then in the beaten eggs, finally place them on the empty plate.
Fry them, a few at a time in a pan with very hot oil until they are golden.
Finally lay them on absorbent paper and sprinkle with salt.
The fried artichokes are ready!
